About the Course
This course will teach you the basics of nutrition science focusing on whole foods as well as plant-based culinary skills. This course consists of four modules, each with a pre-recorded 25-minute lecture and a 2-hour live cooking class. All course content including lectures, links to join the live classes, menus, recipes, and grocery shopping lists, will be available to participants via a Canvas learning page. Participants may take an optional quiz at the end of the course to review concepts learned. Participants that pass the quiz will receive a certificate of completion.
Week 1: Plant-Based Proteins (October 8, 2022)
Week 2: Herbs, Spices & Inflammation (October 15, 2022)
Week 3: Gut Health (October 22, 2022)
Week 4: Intuitive Eating (October 29, 2022)
Course participants are expected to create a Canvas account and visit the Canvas learning page regularly to access all course materials including recipes, ingredient lists, and lectures. Participants are expected to watch the pre-recorded lectures on each weekly module on Canvas to access the next class. Participants are expected to attend each live session via Zoom. Participants are encouraged to cook alongside the instructor during the live classes, however this is optional. Participants may take a quiz at the end of the course to earn a certificate of completion.
Course Learning Objectives & Goals
Throughout this course, you will learn basic nutrition science concepts including how to utilize plant-based proteins, how to incorporate herbs and spices and their importance to your overall health. You will also learn about a plant-based diet that supports your gut health, as well as intuitive eating concepts. Participants will gain experience in plant-based cooking and creating menus with a focus on balance and variety in nutrition.
At the end of this course, participants will have learned:
- Introduction to nutrition science
- Meeting your protein needs using plant-based proteins and how to cook with them
- How to create plant-based menus that are balanced and nutritious
- The basics of herbs and spices, health benefits, and how to use them in your cooking.
- How a nutrient-dense plant-based diet can help with addressing inflammation and gut health
- The basics of incorporating intuitive eating practices into your life.
Course Completion Requirements (in order to receive a Certificate of Completion)
- You must attend all live sessions of the class
- You must complete the course exam with a 75% or higher to pass.
- You must complete the course evaluation.
About the Instructor
Laura Zea (she/her), MS earned her Masters of Science in Nutrition for Wellness degree from Bastyr University. She focuses on whole food nutrition with a weight-neutral approach. She has taught as adjunct faculty at Bastyr University and teaches nutrition workshops for groups. Laura was born and raised in México and works in both English and Spanish. She has a private practice where she offers online one-on-one nutrition counseling.
